Dark syrup with a strong caramel flavor. The color and flavor of the syrup are characterized by the time of harvest. The earlier the syrup is taken from the tree, the lighter, less flavorful it will be. The later the syrup is taken from the tree, the darker, more flavorful, and sweeter it will be.
